Southwest cornbread

3 chipolate peppers
1 green bell pepper
approximately 1/8 onion

1/3 cup honey (or sugua)

2 1/2 cups cornmeal (I used redmill)
2 eggs
1/3 cup oil
1 1/2 cup milk product (I used almond milk respie to to come later)

Mix all.ingredients well grease pan bake for 35mins at 375

Cultural shock!

OK so got a bunch of food donations for my cause. I'm thinking of hosting a dinner party who's up? Almonds, Cashues, Thinih, sesame oil, a bunch of spices. Come on over I have a four burner stove and oven. Food processr. Blender various pots pans and muffin tins and loaf pans. If I revive any feedback at all I will consider a date before the end of the month. Thanks again to marian Flaxman for the wonder of food.

G.F. zucchini chia seed loaf

The site is called freeloafing and I finally made a loaf

2 eggs
2 cups flower ( 1 cup oatmeal 1/2 cup rice 1/4 cup tapioca 1/4 quionia )
1 TBS xatham gum
1 1/2 cups suguar
1 1/2 cups chia seeds
2 zucchini
1 cup kombucha
1 cup oil (grapeseed)

Mix ingredients add flower and xamtham gum last.

Use loaf pan or muffin tins

Bake at 325 for 50 mins

If using muffin tin 350 for 20 mins

By far this is the most complicated resipie I have ever done. Equally the least successful. But a learning experience. There was a portion of the loaf in the center near the bottom  that was not baked throughally but the rest came out perfectly. I welcome any successful varatation on this that people ariave at. :-)

Baked friday Cookie party

Gluten-Free Vegan quiona cookies.

1cup chocolate chips (iused dairy free)
1/4 cup margarine
1/4 brown suguar (iused date sugar)
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground cardamom (anything can be used really not the above listed) Take ingredients mix in sausepan untill smmoth. Then prince 1 1/2 cups of Quoin and mix until its even. (honestly you could use rice crispys or oatmeal for this.) Place in fridge for roughly an hour. Then u can eat them. Turn into a sheet then cut then or ball them or shape them into cookies they rock however u want them.

Sweet. Cookies will be ready in an hour. Post more then. I made nine. One is spoken for. So 8 are left The first 8 people to comment on my blog get a cookie. Its reasonable.

Quick rise-sto

1cuppa rice simmer with 1 1/2 cuppa water
Get tomato base going on side about 15-25oz depending how think you want it. Add flavoring...

When rice has absorbed water add tomato prouduct. Cook until tomato sause thickens up.

What I ended up using was walnuts dill garlic and pepper.

Got all the ingredients for that tomarrow. Just wanted to tempt your taste buds tonight. :-) note that I did not purchase the dairy free chips they were a gift however

Went to the salvation army today too pick up some more food. Great conversations with other people who understand what its like too fall into the cracks. Part of me wants to use my journalism skill and interview them for freeloaving.... humm

Its peanut butter jelly time... no jelly

OK so 2 things happened. I forgot to pick up food. 2 I ate the respie before I took a picture. OK the camera wasn't working. But that's just one more thing that went wrong but... Anyway:

Simple PB :

1 cup peanuts
1/4 cup peanut oil
1TB of raw sugar (any sugar really)
Salt to taste (I used litterally a pinch)

Put in food processing unit. Turn on and grab a spoon.

Vegitarian salsa over rice

OK so last night I had black beans and rice tonight was the same (almost)  beggers cannot be choosie

1 can of black beans rinced add 1 can of tomatoes. (Dised chopped halved whatever)... throw into a pot over the stove. I mixed in motzerllia so it thickened up. Nicely. :-) add spices as u would like. Tonight I used basil and pepper and garlic powder. It's a visual thing and took all of ten minutes to make.

I also chopped up an onion and browned them with a little simple syrup and oil to add a little more flavor to the salsa. And make a decent garnish.

PS. How I make rice: 1 cup rice 1.5 cups water. Its rice its cheep easy and free. Dinner for people that can't afford it is served.

Post post script. I blog from my phone cuz I don't have the best computer or net access so I miss spell stuff alot ans why I don't have the best blog. So deal.


Vegan black bean burger

This is a simply recipe can be made in no time at all (yeah my watch battery died and I don't have the money to fix it so I don't have the exsact time it took to make this.)

First take a 15oz can of black beans rince. Then throw into your food processer (the one I own is a cheep Cuisineart I picked up from the salvo for $5 score *) smooth it out till it is into a smoth-ish paste.

Ad spices of your choice. I was privileged enough to pick up some basil from the food pantry (who wants to get rid of basil???) I also had some salt and pepper in the house with garlic powder and cyan pepper. If there is no garlic powder whole cloves will work be Mindful that dry ingredients are more intence then wet so use less!

After it is to taste add roughly 3/4** cups flouer. I used red mill flours cuz Gluten-Free is awesome. I mixed 1/8 cup of rice flour with 1/8 cup Quoina flour. And then added 1/4 almond flouer. I wanted to use corn flour but didn't have any so I used what I had.

Chill if possible (note that chilling is good to help the pre patties solidify as so they hold there form in the pan) my.fridge was being wonky so I let the pattie paste sit out on the counter for a little while till it conjellied. I measured out the rest of the flour and coated the Pattys.

Heat pan. I was privileged to use oliveoil, failing that any oil will work just try to avoid vegetable oil and conila oil. The point of useing oil is so the pattybdoes not stick to the pan.

Notes:
* summer is coming up look for appliances for sale at yard sales
** so you claim you don't have a mesuering cup? Or spoons? So you just want one less thing to wash. That's cool aswell. Guess what u do have a measuring cup! Where u ask? Remember the can from the beans? Yeah half way full of that can is equally to one cup. Break it down from There. U can do this the hardest part is just waiting in line at the food bank.

Pictured is rice with pine nuts, and a given slice of bread from a loave of bread from wide awake bakery. Just because I cook Gluten-Free dosent mean that I am. I am not going go and give up an entire loaf of bread try Enjoy dinner, or lunch when ever u eat this. :-)
